These pancakes are a perfect way start Valentine’s Day, or any pancake-craving day that is! They’re gluten-free, dairy-free, refined sugar-free, oil-free, and have a vegan option!
Valentine’s Day is almost here—just two days away!🤗 I thought I’d give you a few days in advance with these Paleo Dark Chocolate Chip Pancakes, just in case you need to get any extra ingredients.😉
There’s no doubt that these beauties shouldn’t make the menu on the day of love.
The first thing I think of when it comes to a Valentine’s Day breakfast is pancakes!🥞Either chocolate chip or blueberry. There’s just something dreamlike about pouring maple syrup over a stack of flawlessly fluffy, sweet, and yummy pancakes—topped off with a pile of berries and banana slices, of course. My obsession of fruit coerces me to use it on anything I can!💗🍓🍌🍒🍑🍊🍍🍎🍐🍇🥝🍉🍈💗
Hey, at least it’s a “healthy” obsession.😄
Nevertheless, I usually stick to my usual breakfast of steel cut oats (which taste like a banana cinnamon roll by the way—don’t worry, I’ll share soon!) with Greek yogurt and berries. Although I have it almost everyday, I seriously look forward to breakfast every morning. It’s that GOOD.😮 I can also sneak my daily serving of gelatin and flax meal in it without noticing a thing.
However, when I want to mix things up, pancakes, waffles, and French toast seem to do the trick!

I like to use little metal cookie cutters to make cute shapes of pancakes for the holidays. I haven’t gotten a chance to make cookies with these heart-shaped ones, but they sure did yield incredible pancakes! Gotta love those multitasking tools.😎

Just be sure to not break their hearts too much when you make another batch. Regardless of the short amount of time you spend with them in between scarfing them down, they’ll love you just as much as you love them!💞
Making the Paleo Dark Chocolate Chip Pancakes is fairly simple!
First, start by spraying a griddle or large skillet with non-stick spray. If using a griddle, preheat it to the temperature range it states for pancakes. I cook mine on 350°F. If using a skillet, turn the temperature to medium-high.
Next, in a large mixing bowl, add the dry ingredients: almond flour, tapioca flour, coconut flour, baking powder, baking soda, cinnamon, and sea salt. Whisk to combine.
Then, get out two medium bowls, one for the egg whites and the other for the remainder of the wet ingredients.
After adding the egg whites to the bowl, beat them with a hand mixer until those glistening white stiff peaks form!
Thereafter whisk the egg yolks, almond milk, vanilla extract, apple cider vinegar, and maple syrup (if using) in the other bowl. Pour the wet mixture into the dry and stir with a wooden spoon or spatula until just combined.
Furthermore, add the beaten egg whites and gently fold into the batter until it’s fully infused with the batter.
Lastly, fold in those delicious dark chocolate chips or chunks!
Let the batter sit for about 5 minutes so the coconut flour can absorb some moisture; the batter should be thick, but not so thick that it’s hard to pour. You don’t want the batter to be runny.
After the batter has set, use a 1/3 – ¼ measuring cup to pour the batter onto your griddle or skillet. If using metal cookie cutters use about 1-3 tablespoons, depending on the size of the cookie cutters.
After a few minutes, you will start to see bubbles form. However, wait to flip until they deflate; that’s your sinless secret to pancake perfection!
Cook for a few more minutes and then you have your very own sinless Paleo Dark Chocolate Chip Pancakes!

The top two pancakes had just been filled with batter, while the bottom right pancake is just about ready to be flipped, and the bottom left corner one is the finished product!
Look at how gorgeous that finished pancake is on the bottom left corner. That little, golden, chocolate chip speckled, arrow penetrated heart-shaped pancake totally won me over!💑

As a side note: out of all the pancakes I’ve ever made these are Michael’s favorite! I think he loves them the most because he can eat a ridiculous amount without getting that unwanted super full feeling you get when eating heavy pancakes.💁💯

- 1 ¼ cup blanched almond flour (112g) (can sub almond meal, but will be grainy, which I don’t suggest)
- ½ cup tapioca flour (60g)
- 2 tablespoons coconut flour(about 17.5g)
- 1 cup unsweetened vanilla almond milk (can sub non-dairy milk of choice)
- 2 large organic eggs, room temperature (can sub twoflax or chia eggs)
- 1 ½ teaspoons baking powder
- 1 teaspoon pure vanilla extract
- ½ teaspoon baking soda
- ½ teaspoon organic apple cider vinegar
- ½ teaspoon cinnamon
- ⅛ teaspoon sea salt
- ¼ - ½ cup dark chocolate chips/chunks (70% or higher) (45g – 90g)
- 1-2 tablespoons pure maple syrup or raw honey (*optional for sweeter pancakes) (can also sub an unrefined granulated sweetener of choice)
