These Double Dark Chocolate Chunk Paleo Brownie Cookies are lightly crisp on the outside and fluffy and rich on the insides, like a cakey brownie! They’re so easy to make and taste even better than regular double chocolate cookies. Plus, they’re gluten-free, dairy-free, refined sugar-free, and have a vegan option, which makes them the perfect sinless dessert or snack!
I guess these Double Dark Chocolate Chunk Paleo Brownies Cookies are welcoming Father’s Day on the blog today! 😄🍫🍫🍪What are everyone’s plans? I’ll be visiting my parent’s up North for a few days and getting out of this unbearable, hellish 115°F-120°F Scottsdale, Arizona weather to a more appropriate—but still very unreasonable—100°F-105°F. ☀️🔥👿😖🔥I’m guessing we’ll be making some delicious food and eating a sinless dessert. Paleo Key Lime Pie was on the menu, but sadly that didn’t work out when I tried to take the photo shoot last night. 😢
The crust was completely glued to the bottom of the pan; the filling wasn’t firm enough (the water and fat didn’t separate totally from the canned coconut milk and I foolishly still used it; I’ve done this about three times now with different recipes—NEVER doing it again!😤); and it was a tad too tart. 😑
Days like that just make you want to place your forehead against a wall and wish you could take back the time and energy you invested. But hey, recipe disasters don’t happen very often in the sinless kitchen so I’ll take it as a learning experience: even MORE oil on the pan, less key lime juice, and NO compromising with the canned coconut milk. 😂
Sighs and wilted shoulders in action … Sorry, Dad. 😕 You’re still getting a treat! I made some Gluten-Free Dark Chocolate Peanut Butter Swirl Fudge Bars this morning and I might end up making my No-Bake Paleo Lemon Blueberry Cream Pie on Monday—he loves fruit including desserts so this pie will make up for the highly anticipated Paleo Key Lime Pie.
Let’s stop talking about the failed recipe and talk about the real WINNER on this beautiful day. These Double Dark Chocolate Chunk Paleo Brownies Cookies!! 🙌🏼
Chocolate and I have always had a mutual understanding of what makes life enjoyable. We instantly became best friends at a young age and we’re basically inseparable at this point. 🍫💏🍫When I’m down, dark chocolate seems to uplift me to a point where all my troubles dissipate into nonexistence. 😍
Now that you have an understanding of the intense love relationship dark chocolate and I have, you can have trust in me that these Double Dark Chocolate Chunk Paleo Brownies Cookies are one of the BEST chocolate treats I’ve ever tasted! 😋 It’s kinda crazy that they’re sinless, because you really can’t tell.
As you know, I work at my family-owned breakfast/lunch restaurant, Harlow’s Café. There are a few things that we’re known for: great service, friendly and efficient staff, great food, big portions, and we’ve won the best hangover breakfast quite a few times. 😎🍻
Nevertheless, I work with lots of amazing girls that are into health and fitness (or that try to be lol). They’ve seen pictures of my food online, but I had never brought anything in to work. Not because I didn’t want to, but because this food blogging stuff is pretty expensive, especially when I homemake all of Michael and my food already. 😓
However, after getting a few requests, I finally decided to bring in something when Charisse asked me, “Can you, please, make me something with chocolate?!”
What better treat to bring in then these Double Dark Chocolate Chunk Paleo Brownie Cookies? 💁🏻🍪
After I baked these the night before work—and Michael’s snagged one fresh out of the oven—he asked, downcast, “Are you seriously making all of these for the girls?”
So cute! 😆
Besides some unforgettable facial expressions, what responses did I get from the girls?
“These are AMAZING!”
“I could eat these everyday!”
“They don’t taste healthy at all.”
“I love the texture!”
“They taste like a brownie.”
“So good!” (Didn’t I already say this? 😏)
You know I get super nervous when I let others taste my food, so all the compliments made me feel all warm and fuzzy. 😊💕Needless to say, these were a huge success and the reason why I added “brownie” to the name! I always related the taste to a brownie, too, especially fresh out of the oven, so it was a fitting addition, to say the least. ☺️
Recipes like this Double Dark Chocolate Chunk Paleo Brownie Cookies one make me so happy that I gave up bad food! Everyday feels like a cheat day and it’s so much more rewarding because all the stress and worries about the negative side effects are gone. 👋🏼
With every bite of these Double Dark Chocolate Chunk Paleo Brownie Cookies, they become more addictive. 😳 The slightly crisp on the outside and soft on the inside combination marries so well with the double dark chocolate action. You’ll never believe their gluten-free by the texture of these magical cookies. As soon as you take your first bite, you’ll see why “brownie” is in the title. 😍
Don’t get me wrong, you can NEVER go wrong with my Soft & Chewy Paleo Chocolate Chip Cookies, but I love these Double Dark Chocolate Chunk Paleo Brownie Cookies so much that I made them for my birthday this year to go along with my Paleo Mint Chocolate Chip Ice Cream . THAT is a dangerously sinless combination. 😈❤️
Just look at how drool-worthy the center of these cookies are!
Nevertheless, I think cookies are one of those go-to desserts. Baking cookies is a wonderful bonding experience to have with your kids, especially during the holidays, and it’s also a quick, easy, and super rewarding treat to whip up for yourself or loved ones! 😊
Now you can make memories with a new cookie in town, one that will diminish your cravings for traditional ones—Double Dark Chocolate Chunk Paleo Brownie Cookies! 😎
Let me show you how to make cookies that are:
- Bursting with dark chocolatey flavor
- Refined Sugar-Free
- Full of antioxidants
First, whisk all the dry ingredients in a large mixing bowl.
Then, whisk all the wet ingredients in medium mixing bowl.
Pour the wet into the dry and stir together with a wooden spoon or spatula until everything is incorporated.
The best part—add those beloved dark chocolate chunks into the mix! 😋
Fold in them into the batter so every cookie has a generous double dose of chocolate!
Take a heaping tablespoon of batter and form it into a ball and place it on the chilled, lined cookie sheets about 2 inches apart. The dough will be sticky.
Bake the cookies for about 10-12 minutes, or until the bottoms are lightly browned.
Carefully remove them from the hot pans with a spatula and place them on a cooling rack, or in your mouth, whichever works. 😜
Before I go, I just want to share a picture of my dad and I when I was super little (maybe 3 or 4)!
My dad practically lives outside so this is totally his element. 😂 This was our yard when we used to live in Scottsdale before he made it a wonderland of lush plants and animals! Most of my favorite memories with my dad exist outside when I was young, like, late-night trampoline parties, snow sledding, playing with the animals, and helping him build/garden.
Nonetheless, I want to thank you, Dad, for always being so supportive and encouraging my dreams. I will never forget the good times that we have shared. You’ve always managed to make everyone laugh and have a good time—the light of the party, everyone calls you! You’re a protective, brave, generous, ageless (both of my parents still look exactly the same 😆), and successful man. Thank you for being a great dad all these years! I love you!! 💙
I hope you guys love these Double Dark Chocolate Chunk Paleo Brownies Cookies! 😊 If you make them don’t forget to snap a picture and post it on social media, using the tags #sabrinassinlesssecrets @sabrinassinlesssecrets #TripleS #becausesinlessisdelicious #sinlesssunday so I can see! 😘 I hope everyone has an awesome Father’s Day! Make sure you show your dad that you love and appreciate him! In my case, I will be making up for the pie with another dessert, some presents, and quality time (a few games of pool and movies!) 💙
