Paleo Key Lime Pie was on the menu, but sadly that didn’t work out when I tried to take the photo shoot last night. 😢
The crust was completely glued to the bottom of the pan; the filling wasn’t firm enough (the water and fat didn’t separate totally from the canned coconut milk and I foolishly still used it; I’ve done this about three times now with different recipes—NEVER doing it again!😤); and it was a tad too tart. 😑
Days like that just make you want to place your forehead against a wall and wish you could take back the time and energy you invested. But hey, recipe disasters don’t happen very often in the sinless kitchen so I’ll take it as a learning experience: even MORE oil on the pan, less key lime juice, and NO compromising with the canned coconut milk. 😂

I made some Gluten-Free Dark Chocolate Peanut Butter Swirl Fudge Bars this morning and I might end up making my No-Bake Paleo Lemon Blueberry Cream Pie on Monday—he loves fruit including desserts so this pie will make up for the highly anticipated Paleo Key Lime Pie.

As you know, I work at my family-owned breakfast/lunch restaurant, Harlow’s Café. There are a few things that we’re known for: great service, friendly and efficient staff, great food, big portions, and we’ve won the best hangover breakfast quite a few times. 😎🍻
Nevertheless, I work with lots of amazing girls that are into health and fitness (or that try to be lol). They’ve seen pictures of my food online, but I had never brought anything in to work. Not because I didn’t want to, but because this food blogging stuff is pretty expensive, especially when I homemake all of Michael and my food already. 😓
However, after getting a few requests, I finally decided to bring in something when Charisse asked me, “Can you, please, make me something with chocolate?!”

Let me show you how to make cookies that are:
- Easy
- DELICIOUS
- Bursting with dark chocolatey flavor
- Paleo
- Gluten-Free
- Diary-Free
- Refined Sugar-Free
- Full of antioxidants
First, whisk all the dry ingredients in a large mixing bowl.
Then, whisk all the wet ingredients in medium mixing bowl.
Pour the wet into the dry and stir together with a wooden spoon or spatula until everything is incorporated.
The best part—add those beloved dark chocolate chunks into the mix! 😋
Fold in them into the batter so every cookie has a generous double dose of chocolate!
Take a heaping tablespoon of batter and form it into a ball and place it on the chilled, lined cookie sheets about 2 inches apart. The dough will be sticky.
Bake the cookies for about 10-12 minutes, or until the bottoms are lightly browned.
Carefully remove them from the hot pans with a spatula and place them on a cooling rack, or in your mouth, whichever works. 😜

My dad practically lives outside so this is totally his element. 😂 This was our yard when we used to live in Scottsdale before he made it a wonderland of lush plants and animals! Most of my favorite memories with my dad exist outside when I was young, like, late-night trampoline parties, snow sledding, playing with the animals, and helping him build/garden.
Nonetheless, I want to thank you, Dad, for always being so supportive and encouraging my dreams. I will never forget the good times that we have shared. You’ve always managed to make everyone laugh and have a good time—the light of the party, everyone calls you! You’re a protective, brave, generous, ageless (both of my parents still look exactly the same 😆), and successful man. Thank you for being a great dad all these years! I love you!! 💙

- 1 ½ cups blanched almond flour (168g) (Do NOT sub almond meal; the cookies will be grainy)
- ¼ cup tapioca flour/starch (30g)
- ⅓ cup raw cacao powder (about 26g)
- 2 tablespoons coconut flour (about 17g; every brand is different so check the label)
- 1 ¼ teaspoon baking powder, aluminum and grain-free
- ½ teaspoon baking soda
- ¼ teaspoon sea salt, or to taste
- ¼ teaspoon cinnamon (optional)
- 1 large, organic egg, room temperature (can sub with a flax/chia egg for a vegan option (whisk 1 tablespoon flax meal or chia seeds with three tablespoons water and let sit for 10 – 15 minutes, until it’s thick and gooey like an egg)
- ½ cup pure maple syrup (can sub with raw honey)
- ⅓ cup unrefined, organic coconut oil (about 74g)
- 1 ½ teaspoon pure vanilla extract
- Add-ins
- ½ cup – ¾ cup dark chocolate chunks, 70% or higher (90g – 130g) (THIS brand is my favorite!!)
- Make sure your oven rack is positioned to the middle and then preheat the oven to 350°F.
- Line two cookie sheets with silicone mats or parchment paper and set them in the fridge while you make the batter.
- In a large mixing bowl, whisk all the dry ingredients.
- Then, whisk all the wet ingredients in medium mixing bowl.
- Pour the wet ingredients into the dry ingredients and stir together with a wooden spoon or spatula until everything is incorporated.
- Thereafter, fold in the dark chocolate chunks.
- Take a heaping tablespoon of batter and form it into a ball and place it on the chilled, lined cookie sheets about 2 inches apart. The dough will be sticky.
- Bake the cookies for about 10 minutes, or until the bottoms are lightly browned. Cookies burn fast, so make sure you watch them!
- Carefully remove the cookies from the hot pans with a spatula and place them on a cooling rack, or in your mouth, whichever works. 😉
Store these cookies in an airtight container or plastic bag in the fridge for up to 5 days or the counter for 3-4.
These freeze great!
