This Paleo and Vegan Salted Caramel Sauce is one of my most prized sinless recipes! 🙌🏼🏆 It’s kinda one of those, “No, you can’t be serous!” type of recipes! 😮 It’s unreal how amazing this caramel sauce tastes, looks, and copycats the pourable, silky, and creamy texture! 😍 Can you believe its:

I’ve tried a few Paleo caramel sauces and, sadly, only one of them worked out. 😕 I was super bummed because the first time I made one it worked (which I lost the recipe for) then the others were failures. Completely discouraged at my caramel making skills, I dropped it for two years and picked it back up—only this time I’d be making my own sinless and delicious version. 😏
After executing quite a lot of difficult recipes, I was determined and lax to kill it with my own caramel sauce—so much so that I made it on a whim. 😌 After working all day, going grocery shopping, and making dinner (so exhausted at this point) I just had an urge to make the caramel sauce while I was making and photographing a new sinless snack for Michael and I—some sinless pecan pie bars (which could maybe be in your near future 😜). Sometimes I surprise myself at my intense multi-tasking skills, but I couldn’t be happier with that ability! It’s mandatory with helping run my family’s restaurant, being an author, and a food/wellness blogger. 😳😅
Anyways, when I get urges or feelings to write/make a recipe I do it then and there! It’s similar to how I am with writing. Usually I can always tell when a recipe is going to work out, so when I get a strong feeling that I should attempt something I don’t doubt myself. I’m so glad I listen, because this Paleo and Vegan Salted Caramel Sauce came out PERFECTLY! 😍😍😍
You know a recipe is easy when I attempted it for the first time, while making another recipe and doing a photoshoot all while being exhausted and at 11:00 o’clock at night! 😆
Pretty crazy, huh? Well, that’s me for ya. 💁🏻 God forbid Michael goes a day without having at least two different sinless snacks at the ready. It’s not like there’s always frozen sinless cookies, brownies, muffins, and popsicles in the freezer or anything. 😂 I guess I like to spoil him because he’s the best brother EVER!!! 😊💙❤️
He’s so ✨special✨ that I’m making him a double layer, dark chocolate caramel cake garnished with real 24-karot gold for his birthday on the 28th!! So, just so you know, his birthday dessert is what compelled this caramel sauce. 😉

- 1 can full-fat coconut milk, room temperature and shaken*
- ½ cup pure maple syrup
- 2 tablespoons monk fruit sweetener (can sub another granulated Paleo sweetener of choice)
- 1 ½ teaspoon pure vanilla extract
- ⅛-1/4 teaspoon sea salt
- In a large skillet, over medium-high heat, add the coconut milk, maple syrup, and monk fruit sweetener and whisk together.
- Once it boils, turn it down to medium heat so it’s simmering.
- Whisk the caramel about every 3-5 minutes.
- Towards the last 5-10 minutes you’ll notice that the caramel will turn gold, dark-brown and become thicker, leaving little trails behind when whisking.
- After twenty minutes, take the skillet off the heat and whisk in the vanilla extract and sea salt. Then, pour it into a heat-safe bowl or jar to cool. 🙂
Store the caramel sauce in an airtight jar or container in the refrigerator for about 1-2 weeks or a room temperature for about 4 days. 🙂
