Kellogg's Rice Krispies Treats are known for being insanely delicious and easy, and these Healthy Brown Rice Crispy Treats (or Bites) own up to that reputation! They’re made with actual Paleo marshmallows so you’ll get all the same ooey gooey marshmallow goodness, securing every puffy brown rice granule together. These sinless squares are refined sugar-free, gluten-free, dairy-free, and clean-eating certified!
Recipe type: Sinless Snack
Serves: 16 large square or 64 bite-sized squares
  1. Prepare the Paleo marshmallows at least 24 hours before making these. I found even letting the marshmallows sit for 48 - 72 hours yields fantastic results for the rice crispies.
  2. Line a 9x9-inch pan with foil or grease it with coconut oil.
  3. In a large saucepan, melt the marshmallows over low-medium heat.
  4. Next, add the coconut oil and coconut butter and stir until completely melted and smooth.
  5. Then, gently fold in the brown rice cereal.
  6. Lastly, transfer the mixture to the prepared pan and smooth evenly and press down firmly.
  7. Let it set for at least an hour before slicing them up! Enjoy!! :)
*The time includes the Paleo marshmallows
Store these on the counter for up to 7 days.
*If you fasten a lid over them in a container, you'll find they get softer, which I think is great! However, if you want them to retain their crunchiness, store them with the lid off or just unsecured.
To make these bites, start by cutting out 16 large squares, then cut each one in fourths. :)
