Serves: 4-6 servings
Ingredients
Easy Paleo BBQ Sauce (prepare the day before)
Quick & Easy Paleo Ketchup (prepare the day before, before the BBQ sauce)
Ribs
  • 3 lb. rack baby back ribs
  • 2 tablespoons extra virgin olive oil, one tablespoon for each side
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon parsley flakes
  • ½ teaspoon Italian seasoning
  • ½ teaspoon rosemary or thyme, crushed
  • ½ teaspoon black pepper
  • ½ teaspoon kosher salt
  • ½ teaspoon smoked paprika
  • ⅛ – ¼ teaspoon cayenne pepper, to taste
Instructions
  1. The day before, prepare my Easy Paleo BBQ Sauce and my Quick & Easy Paleo Ketchup! You’ll use the entire BBQ recipe for the ribs, but you’ll still have a good amount of ketchup leftover for a yummy, sinless dipping sauce!
  2. To make the dry rub, place all the spices in a bowl and whisk together.
  3. The night before, or at least one hour before cooking, place a 3lb. rack of baby back ribs on a foil-lined baking pan, and rub each side with 1 tablespoon of extra virgin olive oil
  4. Separate the dry rub, setting aside a little more than half for the top. Start by rubbing the spices along the bottom of the rack and the remainder on the top. Don’t forget about those sides!
  5. If doing this the night before, or several hours before, cover the ribs with plastic wrap and set them in the fridge to marinate. If doing it an hour before cooking, allow them to sit on the counter to come to room temperature.
  6. Preheat the oven to 325°F and place the seasoned ribs in the oven for 15 minutes. Then, using tongs, turn them over and return them to the oven for another 15 minutes.
  7. Thereafter, brush on a layer of BBQ sauce over both sides and return them to the oven for another 15 minutes. Once again, turn them over and cook them for an additional 15 minutes.
  8. Remove the pan from the oven and turn the temperature down to 275°F.
  9. Take a generous amount of BBQ sauce, nearly all of it, and brush it on the bottom and then the top. Carefully cover the top of the pan with foil, making sure it’s completely sealed so no air escapes during cooking (make sure you use oven mitts; no one likes to burn their fingers.).
  10. Return the ribs to the oven and allow them to cook for 2 hours and 20 minutes.
  11. After the time is up, take the ribs out of the oven and very carefully remove the foil. Be sure to not have your face or arms over the pan, as the hot steam will roll out from the foil.
  12. Brush the remaining BBQ sauce over the top of the ribs and return them, uncovered, to the oven for another 5-10 minutes. Feel free to broil them for the last 1-2 minutes if you prefer.
  13. Let the ribs set for about 10-15 minutes before cutting. Enjoy! :)
Notes
Cooking time does not include making the BBQ sauce or ketchup.
Store any leftovers in an airtight container or plastic bag in the fridge for 3-4 days! :)
