These Peanut Butter S’mores Gluten-Free Granola Bars taste just as good as they sound! However, we’re ditching the harmful ingredients—these are gluten-free, dairy-free, refined sugar-free, and clean-eating and they’re even made with PALEO marshmallows!
My Paleo and Vegan Graham Crackers post last week really got me in a s’mores mood—hence, these Peanut Butter S’mores Gluten-Free Granola Bars! 😍
Growing up, one of the snacks I lived off of were those Quaker chewy granola bars. You know the ones in the variety packs of chocolate chip, peanut butter chocolate chip, s’mores, and oatmeal raisin? If you don’t, no need to worry—these as so much better. 💁🏻
Nevertheless, I was pretty obsessed with the s’mores ones, the chocolate chip being my second, following with peanut butter chocolate chip, and oatmeal raisin—but I can see ALL of the flavors had an influence in the making of these Peanut Butter S’mores Gluten-Free Granola Bars! 😋
Once I made these Easy Paleo Marshmallows, my mind journeyed on all the endless possibilities of marshmallow combo goodness. 🙌🏼🌎 Nonetheless, I had to slow down and focus on the favorites first. How about Paleo marshmallows in a deliciously irresistible granola bar? Um, yes! 😜
You can thank Michael for the addition of peanut butter. Yes, all the credit goes to him, because if it were solely up to me, these would’ve been traditional gluten-free s’mores granola bars, but “why stop there?” He asked. “Adding peanut butter would make them so much better!”

There’s no other way to describe the taste than to correlate it with a gooey, toasted marshmallow, dark chocolatey sandwich blanketed with peanut butter. 😋 The other ingredients mimic the presence of graham crackers without you having to make another recipe (even though you know you NEED to make those Paleo and Vegan Graham Crackers! 😉), and they also offer a crunch to their already lightly crunchy texture. ❤️
It will only take one bite for you to fall in love with these Peanut Butter S’mores Gluten-Free Granola Bars! Especially when they’re still warm out of the oven and you get to see a vision of melty toasted marshmallow in action. 😅

In a large saucepan, over low heat, warm the peanut butter and honey. Remove the saucepan from the heat once warmed and easily spreadable.
Next, stir in the vanilla extract, salt, flax meal, almond flour, and cinnamon.
Thereafter, gently fold in the oats and puffed brown rice cereal.
Transfer the saucepan to the fridge for about 15 minutes, or until it cools down—you don’t want to melt the chocolate chips and marshmallows … or do you?
Once cooled, fold in the chocolate chips and marshmallows and press the mixture very firmly into a 9×13” parchment paper-lined or foil-lined baking dish.
Bake on 350°F for about 15 minutes, anxiously awaiting your masterpiece. Oh, and don’t forget to indulge in the aroma first.
Let the bars cool for at least 10-15 minutes before cutting.

- 2 cups gluten-free rolled oats (160g) (different brands can vary, so check your labels!)
- ¾ cups brown rice crispy cereal (about 20g)
- ½ cup dark chocolate chips or chunks (90g) (I like to use Lily's 70% dark chocolate bars)
- ¼ cup blanched almond flour, packed (28g)
- 2 tablespoons flax meal (13g)
- ¾ cup Paleo Marshmallows, cut small (can sub mini vegan marshmallows for vegan option)
- ½ teaspoon cinnamon
- ⅛ – ¼ teaspoon sea salt, depending on if your peanut butter contains salt
- 1 cup natural, creamy or crunchy peanut butter (256g)
- ½ cup raw honey (can sub maple syrup for vegan option)
- 1 ½ teaspoon pure vanilla extract
- Preheat the oven to 350°F and line a 9x13” baking dish with parchment paper or foil.
